Turkey Loaf with Blackberry Wine Glaze

Ingredients

1 lb. Ground Turkey

1/4 C. Breadcrumbs

1/2 C. Onion, finely chopped

2 Cloves Garlic, minced

1/2 C. Parmesan Cheese

2 T. Sun-Dried Tomatoes, drained and chopped

1/3 C. Basil, finely chopped

1/4 C. Italian Parsley, finely chopped

1 Large Egg

Salt and Pepper to taste

Options:

2 T. Ground flaxseed

1/2 C. Beets, chopped

1 C. Spinach, blanched and chopped

Directions

Heat oven to 350 F. Whisk egg and combine all remaining ingredients in mixing bowl. Mix by hand, then form into small rectangular loaves. Bake approximately 20 minutes or until internal temperature registers at 180 F.

Blackberry Wine Sauce

1/2 C. Blackberry Preserves (seedless) or Black Currant Jelly

1/4 C. Red Wine (prefer Cabernet Sauvignon or Merlot)

Combine preserves and wine in small saucepan. Bring to a boil, stirring constantly. Add water gradually if sauce requires thinning. If too thin, make a slurry of 1 T. corn starch to 1/4 C. red wine and add a little at a time until thickened.
