5-8 oz arugula and spinach mix
¼ cup extra-virgin olive oil
½ lemon, juiced
Salt and freshly ground black pepper
1 grilled chicken breast, cubed
Parmesan cheese shavings


In a mixing bowl, drizzle the arugula and spinach mix with the oil and lemon juice. Sprinkle on salt and pepper to taste. Toss until arugula and spinach leaves are evenly coated. Divide salad mixture onto 4 plates. Top salad with grilled chicken and Parmesan cheese shavings.
