3 tbsp olive oil
1 tbsp balsamic vinegar
1 garlic clove, minced
Salt and freshly cracked black pepper
16 wooden skewers
1 lb fresh mozzarella, cut into 32 1-inch cubes
64 grape tomatoes
32 small basil leaves


In a small bowl, combine olive oil, balsamic, garlic, salt and pepper. Marinate mozzarella in dressing at least 30 minutes.

Make the skewers by alternating mozzarella, two tomatoes and basil on the skewers. Arrange skewers on a dish and serve. Optional - drizzle balsamic vinegar over the top of these skewers before serving.
