Ingredients

Dressing:
⅓ cup unsalted creamy peanut butter
¼ cup orange juice
1 teaspoon red pepper flakes
1 clove of garlic, minced
¼ cup water

Salad:
2 hearts of romaine lettuce, chopped
1 cup yellow bell peppers, chopped
1 cup red bell peppers, chopped
1 cup cucumber, chopped
½ cup shredded carrots
1 cup edamame
½ cup green onions, sliced
Juice of half a lime
½ cup cilantro

Directions

In a mixing bowl toss together the first 7 ingredients. Squeeze the juice of half a lime over salad mixture. Divide salad onto 8 plates. Drizzle dressing over each salad. Garnish with cilantro.
